Fool for You

Valentine's and romance can come in every possible colour, shape and action.  For us it doesn't always mean push-up bras, thongs or seven course dinners.  Sometimes it's just about spending a day together rummaging through antique shops, buying new teas, having lunch in a cafe surrounded by books just because your husband knows how much you love second hand books and eating at rough cut wood tables.  It's about running to the store to buy stuff for dinner and finding that the liquor store is closed so you dine with ginger beer. (Honestly, what liquor store closes at 7pm on Valentine's?) It's the comfort you feel in cooking and eating in your sweats, thinking they're still sexy in them and she's still pretty cute even if her legs are less than silky smooth.  It's pushing away from the dinner table to dance like an idiot just to see your husband laugh and shake his head, slightly embarrassed that his wife's moves are NOT like Jagger's!  And it's falling asleep together on the sofa after watching Edward Scissorhands with the satisfaction that you have found the perfect kind of love made just for you.

Now, this is what I called "Lover's Pasta" or "Fatty Lover's Fettucini."  We thought since we eat mostly salads and vegetables and  it was Valentine's, we could ignore calories and fill our bellies guilt-free! (These photos aren't great, but I was far too excited to eat to get good ones. Believe me, this tasted WAYYY better than it looks here!)

Lover's Pasta Recipe
** When I cook I rarely use measurements or recipes and just cook by imagination,taste, smell, and look. 
  • GF Fettucini pasta
  • white button mushrooms
  • full cream
  • port
  • shaved parmesan
  • fresh basil
  • garlic and onion

Sauce:
To make the sauce, I first sauteed LOTS of mushrooms with garlic and some sliced onions with black pepper and Adobo seasoning.  When these have become beautifully soft and lightly browned, add cream and let simmer til it has started to lightly boil.  Add generous glugs of port and roughly chopped basil and keep it on medium heat for about 1 minute. 

Pasta:
When you have boiled the pasta, drizzle with olive oil and a little salt.  Whisk one egg (the amount of eggs depends on the amount of pasta you use), pour over pasta and mix it through. The egg gives it the pasta an amazing, rich, delicious flavour!! Mix through lots of fresh basil and a little shaved parmesan. 

Mix your pasta and sauce together.
Garnish with shaved parmesan and basil and enjoy with a glass(es) of wine or ginger beer!
