The Hungry Man Panini

My man friend came home from work yesterday very hungry.  He had skipped lunch because he's hot and everyone wants a coffee made by a hot barista. After greeting him with lots of kisses and cuddles, he kept on asking me when he could eat dinner, so while he placated his hunger with mini red peppers stuffed with soft sheep cheese (one of our favourite little indulgences) , I whipped up something pretty fabulous.

Ingredients:
Freshly baked bread
Chicken breast
Cheddar
Feta
Avocado
Tomato
Pesto
Cilantro
Wholegrain Mustard

Okay, so please bear with me as I try to go through the steps of making this panini.  I don't ever write out my recipes so I'm not really up to date with all the proper culinary phrases. I'm just going to be descriptive and very 'un-cool and un-Jamie Oliver' about this and hope it makes sense in the end. 

First I took one chicken breast--free range, organic (of course!) 
(We get all our meats from this little Japanese man in the country who raises, butchers and sells it all himself.  He has a degree in nutrition and animal husbandry and takes great pride in raising animals chemical and hormone free! You can see and taste the difference. It's amazing!)
thinly slice chicken breast from top to bottom; it yields several flappy, thin pieces
Sprinkle both sides of chicken slices with sea salt and black pepper and then smear with pesto.

Cook in pan with olive oil until chicken is cooked through and juicy.

Take your bread and on one side smash in some feta cheese and on the other lay a few slices of cheddar and then on both spoon out some of your olive oil from the chicken pan and drizzle over both halves.  The olive oil has pesto mixed into it and gives the bread an amazing flavour! 
Place a few chicken pieces on the bread, put the sandwich together and then in your sandwich maker/toaster. 
When your sandwich is nice and toasted and the cheese melted, take it out and open it up.  Add your cilantro leaves, sliced tomato, avocado and wholegrain mustard.
Now ENJOY!!! It won't disappoint!
